Pistachio Butter Cookies

  • 2-3 oz of raw or roasted unsalted pistachio butter
  • 1/2 cup shelled pistachios, chopped
  • 1 cup sugar
  • 1/2 cup butter, softened (1 stick)
  • 1 egg
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 cups all-purpose flour
  • 2 cups white chocolate chips
  • green food coloring (optional)

In a large mixing bowl or in the bowl of a stand-up mixer, cream together the sugar and butter. Add in the egg, sour cream, milk, and Pistachio Butter. Also, add a few drops of green food coloring if you like.​

In a separate bowl, combine the flour, salt & baking soda. Incorporate the flour mixture into the pistachio butter mixture and then mix until well combined.​

Add in the white chocolate chips and chopped pistachios. Mixing until combined.

​Drop the dough by rounded tablespoonfuls onto a greased cookie sheet.

Bake at 375 for 10 minutes. Let the cookies cool on the cookie sheet for 5 minutes, then transfer to a cooling rack and enjoy!
