- 2 tbsp butter, softened
- 2/3 cup light brown sugar
- 1/3 cup regular sugar
- 1 egg
- 1 tsp vanilla extract
- 2.5 cups ( about 7oz) Pistachio Factory pistachio flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/3 cup white chocolate chips
Directions:
- Preheat Oven to 350 degrees
- Add softened butter and all sugars to a mixing bowl or stand up mixer.
- Beat both until well combined, about 30 seconds.
- Beat in the egg, baking soda and the vanilla until the egg is completely broken up.
- Slowly add in the 2.5 cups of pistachio flour until well combined
- The consistency should be pretty shiny and sticky enough to form round balls.
- Fold in the white chocolate chips with a wooden spoon until evenly incorporated.
- Roll the dough into 1.5 inch to 2-inch balls.
- Place balls on baking sheet lined with parchment paper or silicone baking mat
- Bake for 8-14 minutes, if you want soft centers but a very slight crisp on the edge.
- Remove from the oven and let cool as is for 10 -15 minutes, then transfer to a wire rack to finish cooling.
