- 2-3 oz of raw or roasted unsalted pistachio butter
- 1/2 cup shelled pistachios, chopped
- 1 cup sugar
- 1/2 cup butter, softened (1 stick)
- 1 egg
- 1/2 cup sour cream
- 1/4 cup milk
- 1/2 tsp salt
- 1/2 tsp baking soda
- 2 cups all-purpose flour
- 2 cups white chocolate chips
- green food coloring (optional)
In a large mixing bowl or in the bowl of a stand-up mixer, cream together the sugar and butter. Add in the egg, sour cream, milk, and Pistachio Butter. Also, add a few drops of green food coloring if you like.
In a separate bowl, combine the flour, salt & baking soda. Incorporate the flour mixture into the pistachio butter mixture and then mix until well combined.
Add in the white chocolate chips and chopped pistachios. Mixing until combined.
Drop the dough by rounded tablespoonfuls onto a greased cookie sheet.
Bake at 375 for 10 minutes. Let the cookies cool on the cookie sheet for 5 minutes, then transfer to a cooling rack and enjoy!
