Pistachio Flour White Chocolate Chip Cookies

  • 2 tbsp butter, softened
  • 2/3 cup light brown sugar
  • 1/3 cup regular sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2.5 cups ( about 7oz) Pistachio Factory pistachio flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup white chocolate chips


  1. Preheat Oven to 350 degrees
  2. Add softened butter and all sugars to a mixing bowl or stand up mixer.
  3. Beat both until well combined, about 30 seconds. 
  4. Beat in the egg, baking soda and the vanilla until the egg is completely broken up. 
  5. Slowly add in the 2.5 cups of pistachio flour until well combined
  6. The consistency should be pretty shiny and sticky enough to form round balls.
  7. Fold in the white chocolate chips with a wooden spoon until evenly incorporated.
  8. Roll the dough into 1.5 inch to 2-inch balls.
  9. Place balls on baking sheet lined with parchment paper or silicone baking mat
  10. Bake for 8-14 minutes, if you want soft centers but a very slight crisp on the edge. 
  11. Remove from the oven and let cool as is for 10 -15 minutes, then transfer to a wire rack to finish cooling.
